History & Benefits of Tiger Nuts
Tiger nuts (also known and Chufa nut, yellow nutsedge and Earth almond) are said to have first been eaten in Central Africa by our Paleo ancestors and it’s said to have made up a large part of their diet. Tiger nuts are known to be one of the oldest cultivated plants in prehistoric and ancient Egypt. Roots of wild chufa have been found in Egypt dating back to 16,000 BC
* Tiger nuts are the number one source of resistant starch. This fibre feeds the friendly bacteria in your gut, helping your digestion run smoothly.
* Tiger nuts are nutrient rich. They are a good source of potassium, Vitamin E, Vitamin C, Iron, Magnesium, Zinc, Phosphorus, amino acids and healthy fats.
* Studies show Tigernuts may reduce blood sugar levels, most likely due to the high fiber content.
Other studies indicate other health benefits for heart health and the immune system.
How to add them to your diet:
Tiger nuts are very versatile and can be added to your diet in a variety of ways.
They can be eaten raw or roasted but tend to be softer and easier to chew when they have been soaked or boiled in water.
They make for a tasty snack, but can also be used as toppings for a variety of dishes, such as breakfast cereal, smoothies, salads and yoghurts.
Additionally, tiger nuts can be mixed in with regular nuts and dried fruit as a nutritious trail mix. Tiger nut flour may also be used in bread, cakes or other baking. Tiger nut flour is gluten free and can even be used as a binder in veggie burgers.
In Spain, tiger nuts are used to make a popular plant milk known as horchata de chufa. They can also be turned into dairy-free yogurts and ice cream.
Tiger nut milk Recipe
Soak two cups of tiger nuts in filtered water for 12 hours on the bench or up to two days in the refrigerator (The water should be 2cm above the nuts to allow for swelling).
Rinse and drain Tiger nuts and tip into a blender to about 1/3rd full
Add fresh water to cover the nuts by 3cm and blend to a thin paste
Strain milk through a nut milk bag into a glass bowl. This leaves you with a rich, creamy, sweet, nutritious plant based milk. It’s best chilled before drinking.
If desired you can add other things to spice it up such as cinnamon, nutmeg, vanilla essence or a pinch of salt etc
Store for up to 2-3 days in the refrigerator.
The leftover pulp can be used in baking (freeze if not using immediately)
